MUFFINS 
1 1/2 c. all purpose flour
1/2 c. sugar
2 tsp. baking powder
1 egg
1/2 c. milk
1/4 c. veg. oil
1 c. fresh fruit or 3/4 c. frozen fruit

Combine dry ingredients in a mixing bowl, set aside. Combine egg, milk and oil; mix well. Make a well in center of dry ingredients; pour in liquids and stir just until moistened. Fold in fruit.

Fill greased muffin pans two thirds full. Bake 20 to 25 minutes at 400 degrees; yield 12 muffins. Can use blueberries, blackberries, etc.
