MINI CHEESE CAKES 
24 Nilla Vanilla Wafers
3/4 c. sugar
2 eggs
1 tsp. vanilla
2 (8 oz.) pkg. cream cheese, softened
1 tbsp. lemon juice
1-2 cans pie filling

Blend cream cheese and sugar. Add eggs, lemon juice and vanilla. Put cookies in bottom of paper muffin cup. Spoon in cream cheese mixture. Blend at 350 degrees for 15 minutes. Cool and top with pie filling. These are a hit at parties. I usually double the recipe so I can keep some at home too!
