2 lbs. chicken cutlets 2-3 tbsp. olive oil 1 tbsp. paprika 3 tbsp. herb sauce (see below) Juice from 1 lemon 1/2 c. butter 1/4 c. water 1 tsp. salt and pepper Chopped parsley Fry chicken cutlets in pan with salt, pepper, paprika, and olive oil. Drain off oil and add herb sauce, lemon juice, water, and butter. Serve with chopped parsley and lemon wedges. HERB SAUCE: 1 clove garlic (chopped) 1 tbsp. oregano 1 tbsp. chopped parsley 1 tbsp. basil 1 tbsp. mint leaves 1/2 c. olive oil Juice from lemon |
