EGG SOUFFLE 
1 1/2 dozen eggs
1 c. sour cream
1/2 c. butter
1 1/2 c. of chopped ham or polish sausage
1 c. milk
2 tsp. salt
1/4 c. green onions, chopped fine
Salsa

In a 9x13 inch cake pan, melt butter in oven or on stove top. In a large bowl, mix all ingredients except meat, green onions, and salsa. Beat with a mixer or whip by hand until fluffy. Pour mixture into the cake pan and add meat. Sprinkle with green onions. Bake at 325 degrees for 35 minutes. Knife inserted into the center should come out clean. Serve with salsa on the side.

This is the perfect dish to serve for brunch!
