CAULIFLOWER CHEESE SOUP 
1 lg. head cauliflower
1/2 stick butter
1 med. onion, chopped
1/2 c. flour
2 c. milk
1 c. grated Cheddar cheese
2 cans chicken broth
Salt & pepper to taste

Cook cauliflower pieces in small amount of water until tender; drain. Set aside. Saute onion in butter until transparent; stir in flour, cook 5 minutes, stirring often. Add milk slowly, stirring continually, stir in grated cheese until melted and blended smooth. Puree 1/2 of cauliflower in blender or processor - leave rest of cauliflower in pieces, slowly blend chicken broth into sauce mixture. Add puree cauliflower and cauliflower pieces. Stir to blend well. Salt and pepper to taste. Simmer 15 minutes.
