CHOCOLATE CHIP CAKE
1 pkg. chips
2 1/4 c. flour
2 1/4 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
1 c. sugar
3 egg whites
3/4 c. milk
1 1/2 tsp. vanilla

Cream shortening and sugar. Add unbeaten egg whites one at a time. Add dry ingredients and milk alternately. Add chips. (I take the chocolate chips and grate until fine. The mini chips would probably work o.k.) Reserve 1/3 - 1/2 cup for icing. Bake in 375 degree oven, 25-30 minutes.

ICING:

2 1/2 tbsp. flour
1/2 c. milk
1/2 c. shortening (half butter)
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. chopped nuts (optional)
2-3 c. powdered sugar, sifted

Into flour gradually blend milk. Cook to very thick paste (about 10 minutes), stirring constantly. Cool to lukewarm.

Meanwhile cream shortening with sugar and salt. Add the lukewarm paste. Beat well until fluffy. Fold in vanilla, nuts and reserved chocolate chips. Add powdered sugar to desired consistency. Icing will be soft.
