MARINATED VEGETABLE SALAD 
3 c. carrots, sliced diagonally
1 c. chopped celery
1/2 c. chopped green and/or red pepper
1 med. onion, thinly sliced
1 tsp. celery seeds
1/2 c. reduced calorie Italian salad dressing
1/4 c. vinegar
1/4 c. water
Sugar substitute to equal 1 c. sugar

1. Place carrots in small saucepan; cover with water and boil about 10 minutes or until crisp-tender; drain well.

2. Place carrots, celery, green pepper, onion and celery seeds in large shallow dish; toss lightly and set aside.

3. Combine remaining ingredients in small saucepan, mixing well; bring to a boil, stirring often.

4. Pour sauce mixture over vegetables.

5. Cover and chill overnight.

Makes 10 servings, 1/2 cup each.
