CHICKEN, HAM AND RICE SALAD 
1/2 c. cooked, diced chicken
1/2 c. cooked, diced ham
1 c. cooked long-grain rice
1 c. mayonnaise
2 tbsp. sliced green pimiento-stuffed olives
1 tbsp. minced onion
1/2 c. sliced celery
1 tbsp. lemon juice
Salt and pepper to taste (optional)
Lettuce leaves
2 tomatoes, sliced
2 avocados, sliced, unpeeled

In a mixing bowl, combine chicken, ham, rice, mayonnaise, olives, onion, celery, lemon juice, salt and pepper. Mix until well combined. Line the outer edges of a large round serving platter with the lettuce leaves. Alternate the tomato and avocado slices around the outer edges of the platter. Mound the chicken mixture in the center of the platter. If not serving immediately, cover and chill.

To reduce the fat and calories, use reduced-calorie mayonnaise and only 1 avocado.
