CHICKEN WITH ARTICHOKE HEARTS 
4 tbsp. olive oil
3 lbs. chicken (your choice)
1/2 lb. fresh mushrooms, cut
2 (6 oz.) jars marinated artichoke hearts
4 cloves garlic, minced
1 lg. can Italian tomatoes
1/2 c. wine or sherry
1 tsp. oregano
1 tsp. thyme
Salt and pepper

Heat oil in fry pan. Salt, pepper and flour chicken parts. Brown in oil then place in baking dish or pan. Brown garlic in oil, adding mushrooms, spices and wine. Add to baking dish with tomatoes. Bake at 350 degrees for about 1 hour.
