QUICHE 
2 frozen pie crusts
1 pkg. Swiss cheese, sliced or shredded
1 pkg. Cheddar cheese, shredded
16 oz. half and half OR 1 reg. sized can of evaporated milk
5 eggs
2 tsp. salt
4 tbsp. flour
10 oz. pkg. chopped frozen spinach OR broccoli

You can add anything else into the pieces if you want - mushrooms, onions, ham, etc.

1. Cook the broccoli or spinach and drain. Set aside.

2. Beat eggs, salt, flour, milk in a separate bowl.

3. Line bottom of pie shells with Swiss cheese.

4. Pour 1/2 broccoli or spinach out on each pie - add other, extra ingredients here.

5. Pour 1/2 egg mixture over each pie.

6. Sprinkle Cheddar over the top of mixture.

7. Cook at 375 degrees for about 45 minutes or until firm and brown. Serves 8-12.
