PICKLED BEETS AND ONION RINGS 
2 tbsp. butter (can substitute with olive oil)
1 (1 lb.) jar sliced pickled beets, drained
1 c. onion slices, separated into rings
2 tsp. sugar
1/2 tsp. salt
Dash of pepper

Melt butter in skillet; add beets and onion rings. Sprinkle with sugar, salt, and pepper. Cook over low heat, stirring constantly, until hot and onions are tender, about 15 minutes.
