CHICKEN CHOW MEIN | |
1 lb. chicken 3/4 c. celery, chopped 3/4 c. chopped onion 1 1/4 c. boiling water 1/2 c. uncooked converted rice 1/2 tsp. salt 1 can chicken with rice soup 1 (4 oz.) can mushrooms, drained 1 tbsp. brown sugar 2 tbsp. soy sauce 1 tbsp. butter 1 1/2 c. chow mein noodles Cook chicken (boil or bake) and cut into bite size pieces. Cook celery and onion in skillet in half of the butter until tender. Pour boiling water on rice and salt in 2 quart casserole. Stir in chicken, celery and onion mixture, soup, mushrooms, brown sugar, soy sauce and butter. Cover and cook in 350 degree oven 30 minutes; stir. Cook uncovered 30 minutes longer. Stir in noodles. |
