2 chickens, cut up Peanut oil 2 onions 1 sm. can tomato paste 1 lg. jar peanut butter (non sweetened) 2 c. rice 1 lb. carrots, cut up 1 head of cabbage or 1 pkg. of brussel sprouts 4 sweet potatoes, cut up Salt and pepper to taste Bay leaves to taste Hot peppers (optional) Hot water (approximately 1 cup) Brown chicken in oil and set aside. Brown onions in same oil. Mix one jar peanut butter to hot water to make a thick, gravy like consistency. Add the sauce to the pan with onions. Mix in the tomato paste. Add carrots and sweet potatoes. Add chicken to pan. Lower heat and cover until vegetables and chicken are done, about 30 minutes. Add brussel sprouts or cabbage last. They only take about 5 minutes to cook. Serve stew over cooked rice. |
