CHICKEN AND PEPPERS 
2 red peppers
2 green peppers
2 onions
1 lb. mushrooms
3 boned chicken breast
1/4 c. olive oil
Salt
4 cloves garlic
1/2 c. sherry good quality
Fresh parsley, optional

Cut peppers, onions and chicken into bite size pieces. Slice mushrooms, saute pepper and onions in oil on low heat cover stirring for about 15 minutes. Do not brown add mushrooms, garlic, chicken cook about 5 minutes. Pour on sherry, serve over pasta. Sprinkle with parsley.
