BUTTERMILK CORN MUFFINS | |
1/3 c. oil 1/3 c. sugar 1 egg or 2 egg whites 1 1/4 c. buttermilk 1 c. cornmeal 1 c. flour 1/2 tsp. salt 4 tsp. baking powder 1/2 tsp. baking soda 1 tsp. vanilla Mix oil and sugar; add egg, milk and vanilla. Add sifted dry ingredients and cornmeal, stirring only enough to combine. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 20-25 minutes. Makes 12. Easy to double recipe. |
