CHICKEN FLORENTINE 
4 chicken breasts, skinned & deboned
3/4 to 1 c. spinach, fresh
1/2 c. grated Cheddar cheese
1/2 c. heavy cream
2 tbsp. chives

Saute spinach in small amount of oil until soft. Sprinkle cheddar cheese over spinach. Flatten chicken breasts; fill with spinach mixture and fold into bundles. Saute in olive oil until lightly browned. Put in baking dish. Put heavy cream in saucepan with chives; reduce by boiling. Pour over chicken. Bake at 350 degrees for 5 to 10 minutes. Serve with fettuccine, green vegetable and salad. Absolutely delicious!
