APPLE WALNUT CAKE 
4 c. chopped apples
2 c. sugar
2 eggs
1/2 c. oil
2 tsp. vanilla
2 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 c. walnuts
Powdered sugar - optional

Combine apples and sugar. Set aside for about 30 minutes (the longer they sit - the more moist the cake). Combine dry ingredients - set aside.

Beat eggs slightly in oil and vanilla. Add dry ingredients. Mix well. Add apple mixture and walnuts. Bake in ungreased 9x13 inch pan at 350 degrees for 40-45 minutes. Cool and sprinkle with powdered sugar.
