CREAM PUFFS
1/2 c. water
Pinch of salt
1/4 c. butter
1/2 c. self-rising flour
3 eggs
1 c. whipping cream
1-2 tbsp. sugar
2 tsp. vanilla
Soft sugar

Cook the water with salt and butter. When the butter is melted mix it with the flour (on low heat) and sift it to a paste. Take the pan from the stove when the paste is a ball and put it in the food processor. Mix the eggs, one for one in the paste. Mix until the paste is nice and glossy.

Preheat the oven to 400 degrees. Butter lightly a baking tray. Put the paste in a decorators bag with a decorating nozzle and spurt little puffs on the baking tray. Important is a distance between the puffs. Put the baking tray in the oven for about 25 minutes (3 edge ridge).

Mix the whipping cream with sugar and vanilla until it is good when the puffs are ready and cold, cut them and fill them up with the whipped cream and sprinkle them with the soft sugar.
