PEACH SKILLET PIE | |
2 c. sifted all-purpose flour 1 tsp. salt 4 tsp. baking powder 6 tbsp. shortening 1/2 to 2/3 c. milk 8 or 10 peeled fresh peaches 3/4 c. sugar 1/2 tsp. salt 1/2 tsp. cinnamon 2 tbsp. butter Mix ingredients. Roll out 1/8-inch thick on lightly floured board. Pat into heavy skillet, letting dough hang over sides. Fill in with fresh peaches. Sprinkle with mixture of sugar, salt, cinnamon and butter. Fold extra dough toward center, leaving center uncovered. Bake 10 minutes at 450°F, then 25 minutes at 275°F. |
