OATMEAL RAISIN COOKIES | |
1/2 c. butter 1 c. reg. oats, uncooked 1/4 c. milk 1 egg, beaten 1 c. all purpose flour 1/2 c. sugar 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. ground cinnamon 1 tsp. ground nutmeg 1/2 c. raisins 1/2 c. chopped pecans 1 1/2 tsp. vanilla Melt butter in top of a double boiler over simmering water. Add oats and milk stirring well. Cover and cook over low heat 15 minutes. Remove from heat and cool slightly stir in eggs. Sift together flour, sugar, baking powder, soda, salt, cinnamon and nutmeg. Add to oats mixture stirring well. Stir in raisins, pecans and vanilla. Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350 degrees for 15 minutes. Cool slightly on cookie sheets. Remove to wire racks. Yield: 3 1/2 dozen. |
