4 med. potatoes, peeled and cut into lg. chunks 1 med. onion, chopped 2 cloves garlic, crushed 2 tbsp. parsley flakes 1/2 tsp. basil 1/2 tsp. thyme Place potatoes, onions, garlic, and spices in a large saucepan. Add water to cover. Bring to a boil. Cover and cook over medium heat until done, about 30 minutes. Drain and reserve the cooking liquid. Add 1 cup hot cooking liquid back to the pot. Beat the cooked vegetables with electric mixer until smooth. Serve with gravy or sauce. |
