JOHN LINDHOLM'S RICE PUDDING 
1 qt. milk
1/2 c. rice
1/2 c. sugar
1/2 tsp. salt
1 c. half and half
2 1/4 tsp. vanilla

Scald milk, slowly boil with rice, sugar, salt until rice is tender. (Keep stirring.) Remove from heat. Add 1/2 cup half and half, vanilla and stir. Bake 350 degrees for 1 hour until top is slightly brown. Cool. Add 1/2 cup half and half. Mix well when serving. Top with lingonberries if you can find them. If not, sprinkle with cinnamon and enjoy.
