SCALLOPED POTATOES AND HAM 
1 med. onion, chopped
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
Black pepper
Dry mustard
1/2 c. grated sharp cheddar cheese
4 med. potatoes, boiled & sliced
2 c. cooked ham
1 1/2 c. milk

Make sauce by sauteing onions in butter until tender. Stir in flour, salt, dash of black pepper, dash of dry mustard. Add milk gradually and stir constantly until sauce thickens. Add grated cheese and continue stirring until cheese melts and sauce is blended.

In 2 1/2 quart casserole alternate layers of sliced potatoes and diced ham. On each layer pour some of the sauce. Pour remaining sauce over top. Cover; bake at 350 degrees for 30 minutes. Uncover and continue baking until top is light brown.
