CREAM OF BROCCOLI SOUP 
3 tbsp. butter
4 tbsp. flour
3 1/2 c. milk
4 oz. cheese
1/4 tsp. chicken base or 1/2 bouillon cube
1/2 c. cooked broccoli, chopped
Variation: Add carrots, cauliflower, etc.

Melt butter in double boiler, add flour and mix well. Add milk, beating constantly. When thickened, add chicken base and cheese. Add broccoli and heat. Salt and pepper to taste. Serve at once. 6 servings.
