NICE RICE PUDDING 
1 1/3 c. skim milk
1/8 tsp. salt
4 tbsp. sugar
1 tbsp. softened butter
1 tsp. vanilla
2 eggs
1/2 tsp. grated lemon peel
1 tsp. lemon juice
2 c. cooked brown or white rice
Nutmeg to taste

Combine all ingredients except rice. Add this mixture to the rice, mixing well. Add the lemon peel and lemon juice, mixing lightly. Sprinkle with nutmeg. Put into a greased baking dish and bake the pudding at 325 degrees for 50 minutes or until firm.
