EGGPLANT FRITTERS 
2 c. boiled eggplant
2 c. flour (plain)
2 1/2 c. sugar
2 tsp. baking powder
2 tsp. vanilla
1/2 tsp. salt
2 eggs

Mix well; set in refrigerator, about 2 hours, then spoon out in hot oil. Cook until lightly brown.
