SKILLET OVEN SPARERIBS | |
1 1/2 to 2 1/2 lbs. pork or beef spareribs (cut in serving pieces) Salt and pepper to taste 1/2 c. chopped onion 1/2 c. chopped green pepper 3 stalks celery, chopped fine 2 cloves garlic or 2 tsp. dry garlic 1 1/2 c. rice 3 tsp. chopped parsley Turn electric skillet on to 350 degrees. Season ribs with salt and pepper. Brown. Remove ribs. Pour off drippings, reserving 4 tablespoons in skillet. Add onions, garlic, green pepper, celery; simmer until transparent. Stir frequently. Add rice and 1 1/2 cups water. Stir well. Top mixture with ribs. Cover. Reduce heat to 300 degrees. Cook 20 minutes or until rice is tender. Add parsley and cook 5 minutes longer. Serves 8. |
