THIN PEACH TART | |
3/4 c. unbleached or all-purpose flour Dash of salt 3 tbsp. unsalted butter 2 to 3 tbsp. cold water 1/4 tsp. vanilla extract Vegetable cooking spray 2 med.-size Georgia peaches, thinly sliced & unpeeled 1 tbsp. apple juice 1/2 tsp. vanilla extract 1 tbsp. plus 2 tsp. brown sugar, divided Combine flour and sugar in a bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Sprinkle with water and 1/4 teaspoon vanilla, stir with a fork until all dry ingredients are moistened. Shape dough into ball and press into lightly-greased pie plate. Set aside. Combine peaches, apple juice, 1/2 teaspoon vanilla and 1 tablespoon brown sugar, tossing well. Arrange peaches in concentric circles on dough, starting 1 inch from edge. Sprinkle with 2 teaspoons of sugar. Bake at 400 degrees for 25 minutes or until golden and crisp. Serves 10. |
