BROWN SUGAR COOKIES 
1 qt. sifted flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
2 c. brown sugar
1 c. lard or butter
3 eggs
1/2 tsp. vanilla
1/2 tsp. lemon flavoring

Sift together flour, soda, baking powder, salt, and cinnamon. Add brown sugar, rolled first to remove lumps, and mix well. Cut in fat as for pastry. Add eggs, beaten well, and vanilla. Dough should be stiff enough to handle but rather soft. Roll thin on floured board and cut. Place on cookie sheet and bake in moderate oven. Do not over bake as they brown easily. Cookies keep well; makes large quantity.

My mother, Carrie Gibbs Carpenter, made these cookies often. They were served with cucumber pickle when guests come for an afternoon visit.
