PIZZA OMELET 
4 eggs, separated
1/4 c. skim milk
1 tsp. salt
1/2 tsp. dried oregano leaves
1/8 tsp. pepper
1/2 c. favorite pizza sauce
3 green onions, sliced thin
1/2 c. finely chopped green pepper
12 ripe olives, sliced
1 c. (4 oz.) shredded Mozzarella cheese

Beat egg whites to form soft peaks. Lightly beat egg yolks, milk, salt, oregano, and pepper with fork. Fold egg yolks into egg whites. Spray 8-inch round microwave-safe baking dish with nonstick coating. Pour in egg mixture; spread evenly.

Microwave (medium - 50%), uncovered for 7 to 8 minutes or until eggs are almost set, rotating dish once. Evenly spoon pizza sauce over eggs; top with onions, green pepper, olives and cheese. With full power, microwave 2 1/2 to 3 1/2 minutes, rotating dish twice.

Microwave (high), uncovered, 2 to 3 minutes or until cheese is melted, rotating dish once. Allow to stand a few minutes; cut into wedges.

Since microwave ovens vary in power, you may need to adjust your cooking time.
