STUFFED ZUCCHINI 
2 zucchini
1/2 lb. ground beef
1 sm. minced onion
1 tsp. shortening
3/4 c. bread crumbs
1 tsp. minced parsley
1/2 tsp. salt
1/4 tsp. pepper
2/3 c. bread crumbs
1 tbsp. butter, butter or oil
1/2 c. grated sharp cheddar cheese

Wash whole squash, do not pare. Cook until almost tender in boiling water in covered pan (5 to 7 minutes). Split squash in 1/2 lengthwise and carefully remove pulp from shell and set aside.

Brown beef and onion in shortening and add bread crumbs and the seasonings. Combine meat mixture with reserved squash put mixture in shells. Combine last 3 ingredients, spread over squash. Bake until brown 15 to 20 minutes. Serves 4.
