FRUIT COCKTAIL CAKE 
2 c. flour
2 c. sugar
2 tsp. baking soda
2 eggs
2/3 c. chopped walnuts
Pinch of salt
1 tsp. vanilla
1 can or 2 c. fruit cocktail, drained

Combine all ingredients, mix well. Pour into a greased and floured 13 x 9 inch pan. Bake at 350 degrees for 35-40 minutes. While cake is baking, prepare frosting.

FROSTING:

1 c. sugar
1 c. evaporated milk
1 tsp. vanilla
1 stick butter
1 (8 oz.) can coconut
1/2 c. chopped nuts

Combine sugar, evaporated milk, vanilla, and butter. Let mixture boil for 15-20 minutes, stirring constantly. Remove from heat and add coconut. Spread on cake while cake is still warm. Return cake to oven for 10 minutes. Remove from oven, and sprinkle with nuts.
