ALMOST GUILTLESS CHEESECUPS 
1 pkg. Duncan Hines yellow cake mix
1/4 c. Puritan oil
2 pkgs. lite cream cheese
Equivalent of 3 eggs
3/4 c. sugar
1 tsp. vanilla
1 1/2 c. sour cream
1/2 c. sugar
1 can favorite pie filling

Make your own sour cream by blending 1 cup lowfat cottage cheese, 1/4 cup skim milk, and 1 tablespoon lemon juice in blender or processor until smooth.

Mix cake mix and oil until crumbly. Divide between 24 lined cupcake pans. Press gently with bottom of glass.

Combine cream cheese, eggs, 3/4 cup sugar and vanilla and beat until smooth. Divide evenly into cupcake papers. Bake at 350 degrees for 20 minutes until set.

Combine sour cream and 1/2 cup sugar, spoon over cheesecakes. Bake 5 minutes. Cool. Spoon pie filling over each and serve.
