SALMON WITH CILANTRO AND
JALAPENOS
 
1/2 med. jalapeno, seeded
4 med. garlic cloves
1 c. cilantro leaves
1/4 tsp. ground cumin
1/4 c. fresh lemon juice
1 salmon filet (2 lbs.)
2 tbsp. olive oil
Salt and ground black pepper
1 lg. tomato, sliced thin

Mince first 3 ingredients in blender or food processor. Add cumin and lemon juice; blend until combined. Set this cilantro mixture aside. Brush salmon filet with olive oil, then sprinkle with salt and pepper. Place filet on a double piece of aluminum foil; spread the cilantro mixture on the salmon filet, then arrange the tomato slices over the cilantro mixture.

Fold the aluminum foil over to enclose the salmon, and poke holes in the top with a fork. Cook for 20 minutes in a preheated 400 degree oven, or this can be done on the outdoor grill. Allow 20 to 25 minutes depending on the heat of the fire.
