APRICOT WALNUT TRUFFLES 
2 (12 oz.) bags white chocolate chips
6 tbsp. cream
3/4 c. diced walnuts
1/2 c. diced dried apricots

Melt 1 (12 oz.) bag of white chocolate chips in microwave with 6 tablespoons cream, then combine in food processor (or stir with spoon in bowl) with 3/4 cup diced walnuts and 1/2 cup diced dried apricots. Mix or stir well. Refrigerate until firm, about 1 hour.

Roll into little balls, and dip into melted white chocolate sauce made from one more 12 oz. bag of white chocolate chips. For dipping, it is helpful to use toothpicks or something to lift the little chocolates in and out of the sauce. Set on wax paper.

Since microwave ovens vary in power, you may need to adjust your cooking time.
