LEMON SNOWBALLS 
1/2 c. soft shortening
2/3 c. white sugar
2 tsp. grated lemon rind
1 egg

Preheat oven to 350 degrees. Mix first four ingredients together thoroughly. Then stir in 3 tablespoons strained lemon juice and 1 tablespoon water.

Sift together 1 3/4 cups sifted flour, 1/4 teaspoon baking soda, 1/2 teaspoon salt and 1/4 teaspoon cream of tartar; add to mixture. Stir in 1/2 cup chopped nuts.

Flour hand and form dough into balls the size of a small walnut. Place about 1 inch apart on ungreased baking sheet. Bake for 10-15 minutes in moderate oven. When done, cookies are light brown on the bottom but not on the top. Remove immediately from baking sheet and roll in confectioners sugar. Makes about 4 dozen cookies.
