OVEN FRIED ORANGE RUFFIE 
2/3 c. corn flake crumbs
2 tbsp. crumbled dry parsley
1 tsp. dried lemon peel
1/4 tsp. dried oregano, crumbled
1/4 tsp. dry mustard
1/4 tsp. pepper
1/4 tsp. salt
1 1/2 lb. orange ruffie fillets
No stick cooking spray

Combine first 7 ingredients. Cut fillets into 6 serving size pieces. Coat both sides of fish with crumb mixture. Arrange on 10 1/2 x 15 1/2 inch jelly roll pan that has been sprayed with no stick cooking spray. Bake in a preheated 450 degree oven until fish just flakes with fork (about 10 minutes).
