OAT BRAN MUFFINS 
1/3 c. oat meal
1 2/3 c. oat bran
1/4 c. firmly packed brown sugar
2 tsp. baking powder
1 c. skim milk
1/2 c. egg beaters
1/4 c. honey or molasses
2 tbsp. vegetable oil
8 chopped dates
1/4 c. chopped nuts

Heat oven to 425 degrees. Line 8 muffin cups with paper or spray bottoms only with vegetable oil cooking spray. Combine dry ingredients. Mix nuts and dates into dry ingredients. Add combined milk, egg, honey, and oil, mixing just until moistened. Fill cups almost full. Bake 15 to 17.

Variation: Add 1 medium mashed ripe banana.
