MANDARIN PARFAITS 
1 c. cold milk
1 c. (1/2 pt.) sour cream
1/4 tsp. almond extract
1 (4 serving size) pkg. Jell-O, vanilla or French vanilla instant pudding
1 (11 oz.) can mandarin orange sections, drained

Combine milk, sour cream and almond extract in bowl. Add pudding mix. With electric mixer at low speed, beat until well blended, 1 to 2 minutes. Layer pudding and orange sections in parfait glasses. Chill about 1 hour. Top with whipped topping (optional).
