CALIFORNIA CASSEROLE 
2 pkgs. frozen California blend vegetables (broccoli, cauliflower, carrots)
1 3/4 c. Velveeta cheese, cubed
37 Ritz crackers
1/2 c. (1 stick) butter, melted

Cook vegetables according to package directions. Place in 13 x 9 inch casserole dish. Sprinkle Velveeta cheese over the vegetables. Coarsely crumble the Ritz crackers over the cheese. Pour melted butter over the crackers. Bake at 350 degrees for about 20 minutes, until cheese is bubbly. (For family of 4 or 5, cut recipe in half.)
