STEWED RED CABBAGE | |
1 1/2 lbs. red cabbage 2 lg. onions 2 lg. cooking apples 3 tbsp. cooking oil 1/3 c. raisins 1 tbsp. Sea Salt or reg. salt 1 tbsp. brown sugar 1 to 2 tbsp. lemon juice Prepare cabbage by shredding it fairly fine with sharp knife. Discarding the hard core. Put the cabbage into a large saucepan cover with cold water and bring it to the boil. Take it off heat and turn cabbage into a colander to drain. Meanwhile peel and chop the onions and apples and saute them lightly in oil in a large saucepan for 5 to 10 minutes. Add the cabbage together with the raisins, salt, sugar and lemon juice. Stir well to coat the cabbage with the oil and mix everything together, then put a lid on saucepan and leave the cabbage to cook very gently for 1 1/2 hours stirring from time to time, until it's very tender, or you can put the cabbage into an ovenproof casserole. Cover and bake it in the oven at 325 degrees (160 degrees C) for about 2 hours. You can make the cabbage spicier by adding some cinnamon, caraway seeds, or ground cloves to the basic mixture. |
