ALMOND BAKED FISH 
1 1/2 tsp. lemon juice
1 1/2 tsp. butter, melted
1/4 tsp. salt
4 flounder or other fish fillets
1/3 c. plain yogurt
1/2 c. saltine cracker crumbs
3 tbsp. butter, melted
2 tbsp. slivered almonds

Combine first 3 ingredients in a 12x8x2-inch baking dish. Arrange fish in dish and spread yogurt over fish. Combine cracker crumbs, 3 tablespoons melted butter and almonds in a separate bowl. Sprinkle crumb mixture over fish. Bake at 400 degrees for 10-15 minutes or until fish flakes easily when tested with a fork. This is easy and delicious!
