ENCHILADAS | |
1 pkg. Vargas corn tortillas 3 pkgs. Old El Paso taco seasoning mix 1 lb. ground beef 1 med. onion, chopped 3 c. sharp cheddar cheese, shredded STEP 1: Fry ground beef in large fry pan. Take 1 package of taco seasoning mix; add to ground beef mixture and prepare according to instructions on package. STEP 2: THE SAUCE: In a 5-quart saucepan bring 2 packages seasoning mix in 4 quarts water to boil. Thicken with cornstarch and 1 tablespoon of shortening. STEP 3: Pour enough oil in small fry pan to cover tortillas. Fry tortillas in hot oil for 2-3 seconds, flipping once. Tortillas will be soggy. Place these on paper towels to drain. STEP 4: Cover bottom of ungreased pan with enough sauce to cover bottom of pan. Fill each shell with meat, chopped onion and cheese. Roll and place side by side in 9x13 pan. STEP 5: Sprinkle with remaining cheese, onion, meat (if any left) and remaining sauce. Bake at 350 degrees 30-45 minutes until thick and cheese melts. Let stand 10 minutes and serve. |
