ORANGE CHICKEN 
6 pieces chicken (market day chicken steaks work great)
2 c. orange juice
1/2 c. flour
butter

Coat chicken with flour. Brown in skillet with butter. Remove chicken. Melt 2 tablespoons butter in drippings. Add flour to make a rue. Stir in orange juice and cook over low heat to thicken. Return chicken to pan; cover and simmer about 15 minutes. Serve with white rice. The orange sauce is very nice poured over the rice.
