MEXICAN CHICKEN WITH PINEAPPLE | |
I have decided to share a great recipe I discovered at the weekend by using up a few things that needed eating, as I have used so many great recipes from Cooks.com I wanted to give something back. This is so quick and easy to do as its all done in one pan! 3 medium chicken breasts 1 red onion garlic, to taste 1 red pepper 1 yellow pepper 1 packet Mexican spice mix (dry) salt and pepper, to taste 1/4 medium pineapple, cut into chunks olive oil Total time from preparation to eating is around 20 minutes. Cut the chicken into medium slices, and fry with olive oil in wok or frying pan until half cooked. Slice onion, garlic and peppers and add to the pan, leave covered for 3 to 4 minutes, stirring as to avoid ingredients sticking to pan. Add the spice mix and salt and pepper to your own personal taste. Stir well. Add pineapple which should be cut into small chunks. Simmer for a few minutes and serve. We had it with cous cous and it was fab, could be served with whatever you like, rice, stir fry vegetables or even on its own. You can easily change things around to suit your own taste, I think adding mushrooms or kidney beans would be nice. Thank you for reading my recipe and I hope you enjoy it as much as we did!
