MISUA - SWEDISH CARDAMOM COFFEE BRAID | |
3 c. scalded milk 1/4 lb. butter 1 1/2 c. sugar 1 tsp. salt 2 eggs, well beaten 1 1/2 tsp. cardamom 1 yeast cake (or 2 pkgs. dry) in lukewarm water 12 c. flour Combine the scalded milk, butter, sugar, and salt; cool to lukewarm. Add the beaten eggs, cardamom, and yeast dissolved in water. Stir in about 12 cups of flour. Turn out onto a floured surface. Knead for 10 to 15 minutes. Let rise until double. Punch down. Let rise again to double. Form braids. Let rise until double. Bake at 375 degrees for 20 to 30 minutes. If desired, you may sprinkle the top with a cinnamon-sugar mixture - other wise, after the bread cools, glaze the tops with a confectioners' sugar glaze. |
