STUFFED ZUCCHINI FLOWERS 
2 tbsp. olive oil
1 med. onion, finely chopped
1/2 lb. ground beef
2 cloves garlic, chopped
1/2 tsp. thyme or Italian herbs
1/2 tsp. seasoned salt
Salt & pepper to taste
1 c. French bread, crumbled
Water
12 oz. cooked Swiss chard or spinach
1/3 c. chopped parsley
2 eggs
1/2 c. Parmesan cheese

FILLING: Cook onion and garlic in oil until soft. Add ground beef, brown. Add spices, herbs. Remove from heat. Soak bread in small amount of water, then drain and squeeze out water. Combine bread, meat mixture, chard, eggs, cheeses and mix well. Should be like soft cookie dough.

If necessary add another egg. Stuff each flower with approximately 1 tablespoon filling. Close flowers by twisting gently or folding petals over filling. To cook: place stuffed flowers in well-greased baking dish. Bake at 300 degrees for 30 minutes.
