WILD RICE AND SHRIMP 
1/2 lb. fresh medium shrimp, peeled
1 box long grain wild rice
1 (4 oz.) jar marinated artichoke hearts
1/2 green pepper
Fresh mushrooms, grated
1 can black olives, drained
1 bunch green onions

Cook rice according to directions. Cook shrimp. (Bring water to a boil and cook 3 minutes.)

Mix artichoke hearts, including juice, black olives, peppers, mushrooms, onions, shrimp, and rice. Can be served hot or cold.
