ZUCCHINI FRITTERS 
2 c. zucchini squash
1 lg. egg
1 tbsp. flour
Salt and pepper to taste
Butter

Julienne 2 cups of zucchini squash (do not grate, too much liquid cut in tiny strips). Put in bowl. Add 1 large egg, 1 tablespoon flour, salt and pepper to taste.

Mix well with your hands and form small pancakes. Place small amount of butter in a frying pan on medium heat and brown on both sides. Don't over cook. Enjoy!
