MELISSA'S SEVEN LAYER SALAD | |
This is one of my fav Thanksgiving and Christmas dishes - it is easier than it sounds and can be made the night before!! 1 head OR 1 bag of shredded iceberg lettuce* 1 onion 1 red bell pepper 1 celery stalk 1 can water chestnuts 1 small can baby peas, drained mayonnaise (enough to cover) sugar, for sprinkling SUGGESTED TOPPINGS: imitation bacon bits shredded cheese (your choice) Note: If you choose to use a head of lettuce, break up and wash then lay out to dry. I personally find it a lot easier to use the shredded lettuce that is already done in the bags. Chop up onion, bell pepper, celery and water chestnuts. Line the bottom of a 13x9-inch glass casserole pan with the lettuce. Then sprinkle top with the chopped onion (I don't use a lot because I'm not a fan of onion), bell peppers, water chestnuts, celery and peas. I use a silicone scraper to put enough mayonnaise on top to cover. I try to cover well enough to not see any vegetables sticking out. Sprinkle sugar on top. Cover with plastic (Saran) wrap and put in the refrigerator overnight. To serve, take it out, cover with bacon bits and cheese. Enjoy! Submitted by: Melissa W. |
